Sugar work

Every petal on this is sugar.

Competition pieces, wedding work and the techniques behind them. This is the deep end, and it is also the part most people never believe is edible.

The chef

Hi, I am Nicolaas.

I have spent more than 30 years getting sugar, chocolate and butter into places they were never meant to be, walls, ceilings, occasionally my own eyebrows, and I have loved nearly every reckless, sticky minute of it.

Somewhere in there I picked up a few medals, trained under people far more patient than me, and fell hopelessly, permanently in love with this craft and with teaching it to anyone bold enough to try. You are your own destiny. That is not just something I believe, it is something I have spent three decades proving, one plate at a time.

Everything in this part of the site is hers.

Gran's Kitchen

Before there was Pastry Collective, there was my grandmother's kitchen. A tiny table, a wooden spoon that saw far too much action, and recipes she never wrote down until I made her.

These tutorials are hers, and they are free, forever. If you enjoy the way she teaches, you will like what happens when I get involved. That is what the workshops are for.

What a great class! I'm amazed by what can be done having the right knowledge.

Before you ask

Questions we get asked

The short answers. Anything else, the contact form is at the bottom of this page.

Where are the pastry workshops held?

At the Pastry Collective studio, 164 Church Street, Randburg. Directions are sent with your booking confirmation.

What do I need to bring to a workshop?

Nothing but closed shoes. Aprons, ingredients, equipment and a workspace of your own are all provided.

How do I book and pay for a class?

Pick a date from the diary on this site and book online. You can pay by card or instant EFT on the payment gateway's own secure page, or by bank transfer. Your seats are held while you pay, and the booking is confirmed once the payment clears.

What happens if I have to cancel?

Cancel seven days or more before the class and half of what you paid is refunded. Less than seven days before, the booking is not refundable. The full booking and cancellation policy is on this site.

Can somebody else use my seat if I cannot make it?

Yes. A confirmed booking can be transferred to another person if you let the studio know in writing at least forty-eight hours before the class.

Can you work around allergies or dietary requirements?

Tell us when you book. The booking form has a field for allergies and dietary needs so the kitchen knows well before the day.

Do you take private groups or corporate bookings?

Yes. Send a note through the contact form on this site with the date and the number of people and Nicolaas will come back to you.

How long does a class take?

It depends on the class. Every session on the diary lists its own start time and length before you book.
